How do I store my cake?Cakes are sensitive works of art! In Queensland summers, your cake needs to be stored in the fridge. If you have fondant decorations on your cake you need to wrap the box securely with a towel to assist with humidity control. In Winter, a cool dry spot is fine. See "How long can my cake sit out on display" for optimal serving temperature details. Cupcakes are not as fragile, and are susceptible to drying out in the fridge, so keep them in a cool dark place, away from heat sources and little hands. If for some strange reason you have leftovers, you can freeze them for up to three months if you package them correctly. We recommend cutting your leftovers into 1-2 serve portions and wrapping tightly in cling film, and then wrapping a second time. Pop your wrapped portions into an airtight container and freeze. To defrost, take out the amount you need, and leaving it in its cling film, place on the bench (out of the sun) until it no longer feels cool to the touch. It's important to leave your portion wrapped while defrosting to avoid condensation effecting the texture. Fondant decorative elements can last years if stored completely dry and in an airtight container. Cookies and cupcakes freeze and defrost well too- and are easiest stored in a resealable plastic bag, inside an airtight container. Just remember, after 3 months they don't go bad, but start to get a bit of freezer burn.

How long can my cake sit out on display?Do not display cakes in the sun. Cakes should always be eaten at room temperature. In summer a cake will come to room temperature very quickly, and then start to collapse, so no more than an hour is recommended. If cool air conditioning is available you might get away with 2-2.5 hours. In winter, it can take up to three hours or so, and in some cases cakes can last on display in winter for much longer than this, but we don't recommend it.

What is the lead time on your cakes? We often book up well in advance, and supply chains can be unpredictable, so we recommend you start your enquiry process 4-5 weeks before your event. This allows for finalizing your design needs, and confirmation of payment in plenty of time to block out the appropriate space for you in our schedule. Under two weeks before your event, we cannot guarantee we will be available to facilitate your enquiry let alone your cake.

Why won't you copy the cake in my photo? It's not respectful to other cake artists to directly copy a design they have created. It dishonours their time and creativity, but it's also not fun for a cake artist to be recreating pre-existing ideas. We are artists at heart, and we love to create something new just for you!
